Let's jump into 2026 with a discussion about FLAVOUR. Flavours are so hard to describe and define, even for seasoned food writers. Spicy, earthy, grassy, floral, sulphorous.... What flavours excite your palate? Do you cling to the same recipes and familiar flavours when you order a meal? What flavours do you think go together? What flavours do you love, that none of your friends or family like? Does your choice of diet influence your choice? Do your tastebuds follow a pattern, or are they constantly craving new flavour sensations? Author Niki Segnit drew up a list of 99 flavours for her Flavour Thesaurus. She could have added thousands more, she said, but a book is a book and you have to stop somewhere! Flavour isn't an exact science and it resists fitting into neat categories. Niki says, 'Flavour pairings are driven by history, culture, chefs' wison, and personal prejudice'
