In South Gippsland the desire for locally sourced ethically grown meat is rising, and due to the increase in feral deer the consumption rate of wild venison is climbing. Consolidation and centralisation of the abattoir industry over the last decades, coupled with fewer abattoirs offering service kills for retail farm businesses, has meant much-reduced access to slaughter facilities for many producers. Recent regulatory changes in Victoria have made the task of establishing an on-farm abattoir a realistic possibility. Set up costs are reasonable and point to a potential local solution for Gippsland producers. This workshop will cover the design, construction of micro-abattoirs. Local vet Phil Larwill and Shalbe Welsh a local chef and with a passion for sourcing good quality nutrient-dense local food, and supporting farmers - will lead a discussion "where too from here". We also look forward to hearing ideas from everyone present. Morning Tea by Chris at Flock Stock Basil is not to be missed.
